Winter Canning

Venison in the freezer, Venison on the shelf. The guys have been dressing out a few deer. Mr. Fix~it hunts for 3-4 households. His cousin Mike ( more like a brother, remember the guy who drove through my garden? Yes him, We love him anyway) hunts also but has no freezer space. So together they hunt for various homes…Ours, a bit for Mr. Fix~It’s parents & 2 of our daughters Erika & Danielle. Until recently the majority had to fit in our freezer…which was fine when the girls lived at home.

But when they have moved out and Erika’s family expanded, so did the need expand. As you might have guessed we do have 2 deep freezers but, even they can only hold so much. So canning some of the stew and soup meat has saved a surprising amount of space. Especially since there are 3-4 more weeks left in the season

Also has the side benefit of warming the house.

I have to say I was hesitant at first but it’s great! Especially when I forget to thaw meat for supper. Just open a jar of meat, toss in some veggies, make some dinner rolls and Suppers Ready !

  1. I've been hesitant to try this myself. But let me ask you...is your water level low in each jar on purpose? Or did that happen during processing? Or are you not supposed to put as much water in?

  2. GTM, No water was added! This is just the meat packed to a quart jar, pressure cooked for 90 Min with 10lbs of pressure. I do not season so I am able to use it for soups,stews or BBQ. So easy and so good!

  3. I have only had venison stew once but it was so good! If I had some one to take me I'd go hunt some deer. At least I'd get some peace & quiet! lol

  4. I have not tried Venison...but would like to one day:) Fab preparations there. I still make our own bread although i dont eat it any more..at all...it is just too nice and too naughty...but the others enjoy it very much and i still enjoy making it. I was wondering as i had not heard from you. You must have received my parcel by now ?! Also i was playing around with my gadgets the other day and i accidentally deleted you and a few other ladies from my followers..sorry my friend...i would love you to pop on over and rectify for me when you have time and manage to get through those lists...that is...:) happy day :)

  7. I too love it! We were only able to get one this year but we are enjoying the meat immensely. We have had it every night this week! Nothing is more tasty. :)
